At The Juice Garden in Gary, you can find breads, cookies and cheesecake on the dessert menu -- all vegan, and all in demand.
"Everything here is organic, and we do a lot of vegan as well," said Joe Bruno, son of owners Ron and Pam Bruno, who opened the family business in 2006.
"I think (vegan) is like organics; everything used to be organic, people never even thought about it. And now you see it more and more; it's the same with vegan. You're seeing more and more products out there."
In fact, the family's baked goods are now sold under the name Brunos Organics, he said, and they're available at local health food stores, like Baum's Natural Foods in Merrillville, Schererville and Griffith; Sunrise Health Foods in Lansing, Ill.; Organically Delicious in St. John; and Au Naturel in Valparaiso.
Most of the baked goods, with the exception of a few cakes, are vegan.
Bruno sees two types of vegans -- those who have made their dietary changes for their own health, and those whose eating is in accord with a kinder, gentler lifestyle.
Many of the cookies, breads and desserts he bakes are easily made vegan by a few substitutions, he said.
"If it's a matter of substituting eggs, we use flaxmeal -- it's much better for you and it brings the cholesterol level down to zero," he said.
Of the baked goods, he said, oatmeal raisin probably reigns supreme in popularity, followed closely by banana-nut bread.
Now, in some dishes, he admits, those not used to vegan cuisine will taste a difference.
"Like on a vegan cheese pizza, it won't taste exactly the same," he said. "But people don't seem to mind it -- in fact, they like it."
